Easy Bean Salad - 20 servings of 1/2 cup

Recipe Ingredients for Bean Salad

1/2 cup light balsamic dressing
15 oz kidney beans
15 oz pinto beans
15 oz black-eyed peas
2 cups frozen edamame beans
1 cup frozen corn
1 red bell pepper
1/2 onion, red
1 tsp salt
1 tsp pepper

Recipe Directions for Bean Salad

  1. Drain and rinse all beans

  2. Thaw corn and edamame beans

  3. Hull edamame beans

  4. Dice red bell pepper and red onion

  5. Toss all ingredients together

  6. Add salt and pepper to taste

  7. Serve cold or at room temperature

  8. May be covered and stored in the frig for several days
