Kidney bean salad, great to serve with white rice.

Recipe Ingredients for Bean Salad

31 oz. of kidnney beans, canned
1 medium red onion, thin sliced
1/4 cup of lime juice, from squeezed lime
2 medium tomatoes
1/2 cup of chopped cilantro
1/2 teaspoon of salt
1 tbsp of olive oil

Recipe Directions for Bean Salad

  1. (31 oz. of beans = 2 cans)

  2. Slice the the red onion, and squeeze 3 to 4 limes on the onion and let it sit.

  3. Boils beans in a pot for 2 minutes, with the salt and olive oil, then let it sit to cool

  4. Chop 2 medium tomatoes in small cubes, and also chop about 1/4 cup of cilantro.

  5. After the the onions have been in the lime juice for about 15 minutes, mix everything together. Then cool in the refrigerator. Serve cold.

  6. Great with white rice.
