Recipe Ingredients for bean salad with onion and bell pepper

2 cups cranberry beans
2 cups cannellini beans
1 large red bell pepper
1 red onion
1 clove garlic
4 tbsp parsley
1/4 cup olive oil
4 tbsp lemon juice
5 oz lettuce

Recipe Directions for bean salad with onion and bell pepper

  1. Place beans in a large bowl. Add bell pepper, onion, garlic, and parsley.

  2. Beat oil and lemon juice in a small bowl. Season with SP. Drizzle dressing over salad. Toss well, cover and let rest 30 min. Arrange salad greens in a large salad bowl. Spoon bean salad over top.
