Beans and veggies - low fat, high protein and carb meal. Very filling.

Recipe Ingredients for Bean Salad III

1/2 cup garbanzo beans
1/4 cup pinto beans
400 g green beans
1/2 onion
1/4 cup green pepper
1/2 cup squash
1/4 cup cucumber
1 cup apple cider vinegar
1 tblsp olive oil
1 tsp garlic salt
1 tsp cumin
1 tsp cinnamon

Recipe Directions for Bean Salad III

  1. Soak garbanzo beans and pinto beans overnight

  2. Break green beans into 1" pieces

  3. Dice onion, pepper, squash and cucumber

  4. Mix beans and veggies well

  5. Add Olive Oil (extra virgin, preferred) and mix with beans and veggies

  6. Add spices and apple cider vinegar

  7. Stir

  8. Refrigerate overnight

  9. Serve
