Bean Ragout Recipe

Great chili, sweet pepper, bean and veggie dish, I added ground turkey to satisfy our men. (This is a recipe big enough to fit the 5 cups of mixed beans I had soaking).

Recipe Ingredients for Bean Ragout

16 oz ground turkey
15 oz onion, sweet, chopped (1 large)
15 oz serrano, pepper (mixed peppers some hot some sweet from the garden)
1 cup pinto beans, cooked
1 cup kidney beans, cooked
1 cup lima beans, cooked
1 cup black-eyed peas, cooked
1 cup navy beans, cooked
28 oz diced tomatoes with juice (1 28oz can)
1 T olive oil
3 cloves garlic, pressed
3 T chilli powder
1 tsp oregano, dried
2 tsp cumin
2 tsp salt

Recipe Directions for Bean Ragout

  1. Heat oil in large heavy bottomed pan or Dutch oven

  2. Add onions cook and stir until tender. Add ground turkey and quickly brown. Add chilies, garlic, chili powder, oregano, cumin. Stir and cook about 5 min longer.

  3. Add tomatoes, zucchini, bell peppers, beans and salt. Bring to a boil, reduce heat to medium-low. Simmer, uncovered, 5-10 min until tender.

  4. At this point you can top with cilantro-cheese corn dumplings or serve with cilantro-cheese cornbread.

  5. The second time I made it I left the zucchini out so that it would keep better as leftovers. There is lots of room to play with this recipe.
