Recipe Ingredients for Bean Quesadillas

4 medium flour tortilla (6 inch)
4 tablespoons refried beans (fat free)
6 tablespoons shredded cheddar cheese
1 tablespoon reduced fat sour cream
1 tablespoon mild salsa

Recipe Directions for Bean Quesadillas

  1. Cover each tortilla with a tablespoon of refried beans

  2. Heat a skillet or gridle over medium heat. Place the tortillas on the skillet bean side up (up to whatever many can comfortably fit without overlapping eachother)

  3. Sprinkle each tortilla with about a tablespoon and a half of shredded cheese

  4. Once the cheese starts to melt, fold the tortillas in half. Continue cooking until the tortillas are golden and the cheese is completely melted.

  5. Remove tortillas from heat.

  6. Serve with the Sour Cream and salsa on the side.
