1 tbsp EXTRA VIRGIN OLIVE OIL
1 ONION, FINELY CHOPPED
2 GARLIC CLOVES, MINCED
15 1/2 oz. BLACK BEANS, CANNED
1 GREEN BELL PEPPER, CHOPPED
15 1/2 oz. TOMATOES, DICED ROTEL
5 oz CORN, FROZEN
1 cup SHREDDED CHEDDAR CHEESE

Recipe Directions for BEAN QUESADILLAS

  1. SAUTE THE ONION AND GARLIC. MIX IN BEANS, BELL PEPPER, TOMATOES AND CORN, COOK UNTIL HEATED THROUGH.

  2. USE AS FILLING FOR TORTILLAS OR QUESADILLAS.
