Bean Patties Recipe

Tasty bean patties to serve for lunch with a saland on the side. Any canned beans will do, just remember to rinse really well as the liquid is very high in salt. I make a batch and then pack them in my lunch box to eat cold the next day.

Recipe Ingredients for Bean patties

1 Beans, Kidney, Red, Mature Seeds, Canned
2 potatoes
1 onion
1 zucchini
1 egg
2 ml pepper
5 ml cumin
2 tbs olive oil
1 cup breadcrumbs

Recipe Directions for Bean patties

  1. Boil the 2 medium sized potato (whole in skin) till soft, mash and set aside

  2. Drain and wash the can of beans well, then mash

  3. add the potato and the beans together in a bowl

  4. add the finely chopped (small) onion, pepper and cumin.

  5. Grate the zucchini and add to mixture

  6. add the slightly beaten egg

  7. combine mixture well and if too moist add some of the bread crumbs. mixture should be stiff enough to form a pattie.

  8. roll in the bread crumbs, shape and set aside on a plate

  9. Leave the patties in the fridge for about an hour before frying

  10. Fry in a non stick frying pan or lightly dusted with olive oil. (Be careful as they are delicate and they need the nice crispy brown crust to form to kep them together.

  11. Drain on paper towel and serve with a side of salad.
