Recipe Ingredients for Bean and Pasta Soup

4 oz pasta (uncooked)
1/4 cup celery ribs
2 medium carrots
1 medium onion
1 garlic clove
1 tbsp Olive Oil
6 cups water
14 1/2 oz diced tomatoes
2 1/2 cups reduced-sodium chicken broth
1 tsp dried basil
1/2 tsp dried rosemary
1/4 tsp salt
1/8 tsp black pepper
15 oz cannellini beans
2 cups fresh spinach (shredded)
1/4 cup Parmesan cheese (shredded)

Recipe Directions for Bean and Pasta Soup

  1. Cook pasta according to package directions. Meanwhile, in a large nonstick saucepan, saute the celery, carrots, onion, and garlic in oil for 5 minutes. Stir in water, tomatoes, broth, basil, rosemary, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until carrots are tender.

  2. Drain pasta; stir in vegetable mixture. Add the beans; heat through. Stir in spinach; cook until spinach is wilted, about 2 minutes. Sprinkle with paremesan cheese.
