Recipe Ingredients for Bean N Rice Burritos

15 ounce black beans, rinsed and drained
14 1/2 ounce diced tomatoes, drained
1 small onion, diced
1 clove garlic, minced
1 tsp ground cumin
1 tsp chili powder
2 cups brown rice, cooked
12 flour tortillas, warmed
4 ounces reduced fat cheddar cheese
1 cup light sour cream

Recipe Directions for Bean N Rice Burritos

  1. In a large skillet, saute onion, garlic clove, cumin and chili powder.

  2. Add the beans and tomatoes and heat through.

  3. Stir in the rice.

  4. Spoon about 1/3 cup of mixture on each tortilla and top with cheese. Fold sides and ends over filling and roll up. Serve with sour cream, if desired.
