Recipe Ingredients for Bean and ham soup

3/20 c olive oil
454 g white beans, dry
4 carrots, medium
2 potatoes, medium
2 celery stalks
1 1/2 onion, medium
200 g ham, smoked
10 g bacon, smoked
2 l water
3 cloves garlic

Recipe Directions for Bean and ham soup

  1. Soak your beans in water overnight

  2. Cook the beans in a pressure cooker (faster) or in a regular soup pot until tender

  3. Blend half of the cooked beans and reserve the other half

  4. In a heavyweight cast iron dutch oven or a big soup pot sautee bacon in olive oil

  5. Add chopped onions and garlic and saute for 1-2 minutes, until translucent

  6. Add cubed carrots, celery and potatoes and sautee stirring ocasionally for 5-7 minutes

  7. Add all of the water, ham and beans (not the blended mixture, but the other half) and simmer covered with a tihgt fitting lid until all the veggies are tender

  8. Add blended mixture of beans and season to taste (I sometimes add some lemon juice for flavour)
