Very good. Can be served as a dip with tortilla chips or as a salad.

Recipe Ingredients for Bean Dip / Bean Salad

30 oz. pinto beans, drained and rinsed
30 oz. black eyed peas, drained and rinsed
30 oz. corn, drained
2 jalapeno peppers, finely chopped with seeds removed
1 green bell pepper, chopped
1 red bell pepper, chopped
1 red onion, chopped
2 stalks celery, chopped

Dressing:
3/4 cup apple cider vinegar
1 cup Splenda
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Bean Dip / Bean Salad

  1. Dice green pepper, red pepper, onion, celery and mince jalapeno pepper. Combine with beans, corn and black eyed peas in a large bowl.

  2. Boil dressing ingredients together for a minute or two. Let cool before pouring over bean mixture.

  3. Makes a ton.

  4. Can serve with "Scoops" tortilla chips or eat as a salad.
