Makes 12 servings



Makes a moist cornbread without additional oil. Buttermilk may be made by adding milk to 2 tsp lemon juice or vinegar to make 1-1/2 cups. The milled flax seed replaces 1 T oil.

Recipe Ingredients for Bean Cornbread

1 cups cornmeal
193 g great northern white beans, pureed (3/4 cup puree)
1 cups buttermilk
3 T milled flax seed
2 t baking powder
1 t sugar
1 t salt
1/2 t baking soda
2 eggs

Recipe Directions for Bean Cornbread

  1. Mix all ingredients together until moist.

  2. Pour into greased square 8X8 pan.

  3. Bake at 450 for 25-30 minutes.
