Mexican beans, corn, spinach and tomatoes in tortillas with low fat cheese

Recipe Ingredients for Bean, corn, spinach tacos

192 grams corn tortillas
14 oz chopped tomatoes
1 cup boiled black beans
3/4 cup shredded low fat cheddar cheese
14 oz cooked corn
1/2 lb raw spinach

Recipe Directions for Bean, corn, spinach tacos

  1. Rinse and chop spinach, stir fry in skillet in the water left on the leaves from rinsing. Add garlic powder and dried cilantro (or fresh if you have it), black beans, corn, and tomatoes. (I used canned black beans, canned corn and canned chopped tomatoes - drain and rinse all first)

  2. Fill 8 6 inch corn torilla shells with mixture, set upright in baking dish, cover with cheese. Put any left over mixture on sides.

  3. Bake at 400 for about 6 minutes, until cheese melts.
