Easy way to use leftover beans. This vegetarian chili goes well with hot cooked rice, noodles, couscous, bulgar, or tortilla chips!

Recipe Ingredients for Bean and Corn Chili

2 tbsp olive oil
1 cup onion, chopped [11282&size=1]
1 cup corn
1 cup tomatoes, crushed
1 cup cherry tomatoes
1 tbsp chili powder
1 tsp cumin, ground
1/2 tsp coriander, ground
1/2 tsp dried oregano
4 cups pinto beans

Recipe Directions for Bean and Corn Chili

  1. Cook beans (or substitute canned ones if you're in a hurry).

  2. Heat oil in a soup pot. Add oinon and saute over medium heat until translucent.

  3. Add remaining ingredients and cook over low heat for 25 minutes, stirring occasionally.

  4. Serve in bowls over hot grains, accompanied by crisp tortilla chips, or top with cheese. Also good served over lettuce (instead of rice or pasta), when you're trying to keep the calories down!
