Recipe Ingredients for Bean Burgers

1 tbsp. grapeseed oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 tsp ground coriander
1 tsp ground cumin
4 oz white mushrooms, finely chopped
15 oz kidney beans, drained and rinsed
2 tbsp. fresh flat leaf parsley, chopped
1 salt and pepper
1 tbsp. flour, for dusting

Recipe Directions for Bean Burgers

  1. Cook onion in 1/2 tbsp. of oil until softened.

  2. Add garlic, coriander, cumin, and cook for 1 minute..

  3. Add mushrooms and cook, stirring frequently until all of the liquid has evaporated. Transfer to a bowl.

  4. Add beans and remaining oil to the bowl and mash together with mushroom mixture. Season with salt and pepper to taste.

  5. Preheat broiler to medium high. Divide mixture into 4 round patties and brush with flour. Cook about 5 minutes on each side.
