A bean-lentil-barley soup with vegetables. The broth could also be Vegetable instead of Chix stock

Recipe Ingredients for Bean-barley soup (v2)

1 cup Barley, Pearled, Cooked
1 medium Onions
6 oz Carrots
20 oz Mild Diced Tomatoes and Green Chilies
8 serving (365 organic everyday value) chicken stock
6 oz Spinach
226 g (whole foods) lentils
141 g (Great Value) Pinto beans - dry
226 g (Great Value) Great Northern Beans - dry
226 g (Great Value) light red kidney beans - dry

Recipe Directions for Bean-barley soup (v2)

  1. Soak beans over night

  2. Put beans and chicken stock in crockpot on low-medium.

  3. Add onions and carrots

  4. Cook until beans are thoroughly softened 8-10 hours

  5. Add spinach and tomatoes

  6. Cook at least another hour...eat
