Recipe Ingredients for Bean Balls!

30 ounces (2-15 oz. cans) cannellini beans, drained and rinsed
1/4 cup vital wheat gluten
1/2 cup plain bread crumbs
2 tbsp. tomato paste
1 tsp. salt
1 tsp. oregano
1 tsp. thyme
1/4 tbsp. lemon zest
2 tbsp. olive oil

Recipe Directions for Bean Balls!

  1. Squish the beans, mix in all other ingredients.

  2. Form into ping-pong size balls. Should make 12-20 depending on your interpretation on the size of a ping-pong ball.

  3. Bake at 350* for 15 minutes, flip then another 15 minutes or pan fry.
