Easy to make and easy to add leftover vegetables before they go bad!

Recipe Ingredients for Bean and bacon soup

16 ounces navy beans
8 ounces bacon
4 carrots
2 medium potatoes
1 cup chicken broth
2 cups water
1 onion
2 tbsp olive oil

Recipe Directions for Bean and bacon soup

  1. Cook the bacon; drain fat. Let cool. Cook the onion in a pot with the olive oil; when done, add beans, carrots, potatoes, water and chicken broth. Add salt and pepper to taste.

  2. Once carrot and potatoes are done, add bacon.

  3. I like to add diced avocado on top too, or serve with a piece of bread.
