Serve with "scoop" chips! This is a great chunky dip to bring to parties.

Recipe Ingredients for Bean & Avocado Marinade Salsa

1 medium avocado, diced
1 medium white onion, diced
1 medium green pepper, diced
1 jalapeno pepper, diced
15 ounce baby corn, chopped
15 ounce pinto beans, rinsed
15 ounce black eyed peas, rinsed
3/4 cup apple cider vinegar
1/2 cup olive oil
1/4 cup sugar
1 tbsp water
1 tbsp sea salt
1 tbsp black pepper
1 dash of hot sauce
1 cup fresh cilantro, chopped

Recipe Directions for Bean & Avocado Marinade Salsa

  1. Cut all vegetables and avocado.

  2. Put them in a bowl with beans. (Keeping avocado chunks on the bottom)

  3. Combine the remaining ingredients, separately and bring to a boil.

  4. Pour HOT dressing over bean & veggie mixture.

  5. Marinate for 24 hours.

  6. Stir in the fresh cilantro (and more salt and pepper if desired) before serving.
