Recipe Ingredients for BBQ Seitan and Layered Vegetables

2 tbsp olive oil
1 yellow onion, sliced
2 Yukon Gold potatoes, sliced
1 red bell pepper, sliced
2 medium carrots, shredded
1 medium zucchini, sliced
12 oz seitan, chopped
6 oz tomato paste
1 tsp dry mustard
1/4 c dark molasses
1/4 c low sodium soy sauce
2 tbsp cider vinegar
2 tbsp light brown sugar
1 c water

Recipe Directions for BBQ Seitan and Layered Vegetables

  1. Heat 1 tbsp oil in a skillet over medium-high heat. Add the onion, sliced into half-moon rings, and cook, stirring, until slightly browned, about 5 minutes. transfer to the slow cooker. Add the potatoes to the same skillet, cook until browned, and arrange on top of the onions in the cooker. On top of that, layer the bell pepper, carrot, and zucchini.

  2. Heat the remaining 1 tbsp oil in the same skillet over medium-high heat. Add the seitan and cook until browned on both sides, 7-10 min. Layer it over the top of the vegetables in the slow cooker.

  3. In a small bowl, combine the tomato paste, mustard, molasses, soy sauce, vinegar, brown sugar, and water, and pour over the ingredients in the slow cooker.

  4. Cover and cook on low for 6-8 hours.
