BBQ Chicken & Veggie Quesadillas made with whole wheat tortillas

Recipe Ingredients for BBQ Chicken & Veggie Quesadillas

4 oz Pulled White Meat Rotisserie Chicken
4 serving 2% Milk Reduced Fat Mild Cheddar
4 serving Mexican Four Cheese 2% Milk
8 tortilla Smart
1 cup Frozen Spinach
0.25 cup, sliced Onions
1.5 cup, chopped Peppers, Sweet, Red
2 tbsp Extra Virgin Olive Oil
2 clove Garlic
4 tbsp Sweet Baby Rays Barbecue Sauce

Recipe Directions for BBQ Chicken & Veggie Quesadillas

  1. 1. Dice up the chicken and mix with the BBQ sauce. Set aside.

  2. 2. Dice up the bell pepper and onion, and mince the garlic.

  3. 3. Saute the onion, bell pepper, and salt in olive oil for several minutes until starting to soften, then add the frozen spinach and garlic. Continue to saute until the spinach is defrosted and all of the veggies are soft.

  4. 4. Lay out 4 of the tortillas. Divide the cheddar cheese evenly between them. Divide the chicken and veggies evenly and spread on top of the cheese. Top with the mexican blend cheese (divided evenly) and then place the remaining tortillas on top.

  5. 5. Carefully transfer the tortillas to a preheated panini pan and cook until cheese is melted, about 3 minutes.
