A little of this, a little of that and my fingers crossed as it cooked. Turned out REALLY well.

Recipe Ingredients for BBQ Beef on a bun.

1.19 kg Eye of round beef roast
20 g Montreal steak spice
12 oz coke zero
3/4 cup kraft light barbecue sauce
2 tbsp corn starch
1/4 cup water

Recipe Directions for BBQ Beef on a bun.

  1. Wash beef roast.

  2. Cut up one onion in quarters and place it in the bottom of the slow cooker. I didn't add it to the ingredients because I pulled it all out before we ate it, it was just there for flavour. You can leave it in if you like.

  3. Rub beef with montreal steak spice and place on top of onions.

  4. Pour the can of coke zero into the cooker.

  5. Cook on low for 9 hours or so.

  6. Remove beef from cooker, you can also take the onion and some of the juice (but not all of it!) out of the cooker at this point.

  7. Cube or shred the beef, whatever you prefer and return to the slow cooker. Add bbq sauce and stir well.

  8. Cook for another 1-2 hours.

  9. Turn up cooker to high heat.

  10. Mix corn starch and water together in a bowl and pour over mixture.

  11. Stir well and let cook on high as it thickens.

  12. Serve over fresh or toasted buns.

  13. I put the onions on the table separate for those that wanted to add them back in.

  14. Times are just a guideline. I put the roast in before I went to bed and then cut it up before we went to church. Both times could have probably been a little longer or shorter. This is just how it fit in my day. Be beef had an amazing flavour even without the bbq sauce, so you could use this as a good method for normal roast.
