Yummy lentils, in a yummy homemade barbecue sauce.

Recipe Ingredients for BBQ Baked Lentils

3 tbsp olive oil
4 cloves garlic, minced
1 cup ketchup
1/4 cup brown sugar
2 tbsp paprika
1 tbsp chilli powder
1 tsp. cayenne
2 tbsp. lemon juice
1/4 cup yellow mustard
1 1/2 cup lentils
3 cups water
1/2 medium onion, minced
1 tsp. salt
1 tsp. pepper

Recipe Directions for BBQ Baked Lentils

  1. Sauce: In a pot, heat olive oil over medium-high heat.

  2. Add 2 cloves of minced garlic and sautee for 2 or 3 minutes.

  3. Add ketchup, brown sugar, paprika, chilli powder, cayenne, 1 cup water, lemon juice, and mustard.

  4. Stir to combine and simmer for 10-15 minutes, stirring occasionally.

  5. Lentils: In a 8x8 (or larger) baking dish, combine lentils, 2 cups water, minced onion, 2 cloves minced garlic, salt, pepper, and the BBQ sauce prepared above.

  6. Bake for one hour at 375-400F stirring every 15 minutes.
