Getting my French Fry Fix has always been a problem. I know fast food french fries are not good for me as they are one of the delicious reasons I need to lose weight, nor do they fit in to a Michael Pollen style whole natural food diet that excludes eating any "food" that arrives through the window of your car. Yet, every now and then, I simply have to have french fries. Fortunately, I discovered a wonderful recipe from the BBC and now there is absolutely no need to consume a thousand calories worth of oil by eating take out fries, nor is there any need to give Mr. Ore Ida my money. Delicious home made garlic oven fries are very reasonable in calorie, higher in nutrition, delightfully crispy outside and soft inside, far tastier than a bag of Ore Ida - all with only a few more minutes preparation time. I'll never crave take out or frozen pre-formed potato bits again!

Recipe Ingredients for BBC Garlic Roasted Potatoes

4 potato (2-1/3" x 4-3/4") Potatoes, Baked, Flesh
2 tbsp Olive Oil
1 tsp Garlic Salt

Recipe Directions for BBC Garlic Roasted Potatoes

  1. Heat oven to 375 degrees.

  2. Peel potatoes and cut in to long french fry shapes about the size of a finger. Rinse under cold tap water and pat dry.

  3. In a large bowl, mix the potatoes with enough olive oil to coat and then sprinkle with a generous amount of garlic salt.

  4. Spread olive oil on one or two baking sheets (or spray with Pam) and spread out the potato fingers - it is critical to not crowd the fries or they will not crisp. If you are making a lot, use two sheets and swap them out in the oven or use two ovens if you are fortunate to have them.

  5. Roast for about 30-40 minutes, turn the potatoes about half way through and changing the sheets from top to bottom rack if you are using two baking sheets. They are done when they are turning a golden brown.

  6. Place in a bowl and sprinkle with sea salt if you like.
