reduce the olive oil, and reduce the calories quite a bit! fairly easy, and delicious! horseradish mashed potatoes make for more calories, but you could probably also substitute some other mashed veggie with skim milk and a little tanginess like horseradish or mustard.

20 ounces salmon fillet
1 tbsp italian parsley, minced
3 beets
1 1/2 tbsp shallot, minced
3 tbsp lemon juice
1 tbsp lemon zest
1 tsp fresh thyme
3/8 cup olive oil, virgin

  1. season salmon with salt and pepper, sprinkle with minced parsley, arrange on baking pan, and set aside until just before serving.

  2. preheat oven to 425. chop greens from beets (leave about 1" stems) and place in a baking dish with a little water. Roast for 45 min - 75 minutes, depending on the size of the beets. beets are done when tender and skin peels off easily.

  3. in a small bowl, combine lemon juice, lemon zest, shallots and thyme. let macerate for 20 minutes, then whisk in the olive oil.

  4. when beets are done, remove skins, cut off tops and bottoms, let cool, and cut them in a small dice.

  5. combine beets and olive oil mixture. let flavors marry for 30 minutes.

  6. for the salmon, preheat oven to 450. cook salmon for 8 minutes for rare, up to 12-13 minutes for well done.

  7. serve beet mixture over salmon and eat right away!
