This delicious soup is quick and easy to make. Use low sodium broth and tomato sauce to cut down on the sodium level of the recipe.

Recipe Ingredients for Basque Garlic Soup

12 cloves garlic, minced
1/8 cup olive oil
4 cups chicken broth
1 cup water
8 oz canned tomato sauce
1/4 cup orzo
1/2 tsp black pepper
2 eggs, whisked

Recipe Directions for Basque Garlic Soup

Heat olive oil in a large saucepan. Add garlic and sautee until garlic is tender. Add broth, water, and tomato sauce and bring to a boil. Add Orzo pasta and pepper and boil for 10 minutes, or until pasta is tender. Before serving, slowly blend eggs into the soup with a whisk and cook for another minute or so to let egg set.
