Recipe Ingredients for Basque Chicken

2 medium onions, thinly sliced
6 garlic cloves, thinly sliced
3 pounds chicken breast
1 tsp salt
1 tsp ground black pepper
2 tbsp olive oil
1 tbsp smoked paprika
4 medium tomatoes, peeled, seeded and chopped
12 oz roasted red peppers, sliced
1 c reduced-sodium chicken broth

Recipe Directions for Basque Chicken

  1. Preheat oven to 425.

  2. Spread onions and garlic evenly on the bottom of a large shallow roasting pan. Cut chicken breasts into 8 equal pieces. Sprinkle chicken pieces on both sides with salt and pepper. Place chicken in pan. Drizzle with olive oil; sprinkle with paprika. Bake 20 minutes.

  3. Add tomatoes, red peppers and broth. Continue baking 35 to 40 minutes, basting chicken occasionally, until chicken juices run clear.
