Recipe Ingredients for Basilicata

6 cloves garlic
1/4 cup olive oil
3 lbs roma tomatoes
1/2 tsp salt
1/2 tsp ground pepper
1/3 cup chopped fresh basil

Recipe Directions for Basilicata

In a 3 quart saucepan, cook garlic in hot oil over medium heat for 1 minute. Stir in tomatoes, salt and pepper. Reduce heat to medium-low. Cook, uncovered for 15 to 20 minutes or until sauce is thickened and chunky, stirring occasionally. Stir in basil. Simmer for 5 minutes more. If desired, adjust the seasonings to taste. Makes 3 cups.
