A delicious dip for baked tortilla chips, baby carrots, mini celery sticks, or cucumber slices. "Authentic" hommus is made with sesame tahini, but I prefer the lighter and less bitter taste of toasted sesame oil.

Recipe Ingredients for Basil & Sweet Red Pepper Hommus

2 cups cooked garbanzo beans
3 cloves garlic (in their jackets)
1 cup red pepper, cut into chunks
12 basil leaves (large)
2 tsp toasted sesame oil
2 tsp rice vinegar
3 tbsp lemon juice
1/4 tsp salt
1 fresh ground black pepper

Recipe Directions for Basil & Sweet Red Pepper Hommus

  1. Cook a 1 lb package of garbanzo beans according to package directions. Reserve 2 cups of the cooked beans for this hommus recipe; cool and refrigerate the remaining beans for later consumption. If you are in a hurry, 2 cups of canned cooked garbanzo beans can be substituted in this recipe.

  2. In a hot skillet, pan roast the garlic cloves and sweet red pepper chunks until soft and beginning to caramelize. Remove and discard garlic jackets.

  3. In a blender or food processor, puree the roasted garlic and red pepper, basil leaves, sesame oil, rice vinegar, and lemon juice. Add the salt and the cooked garbanzo beans and continue blending until the mixture is extra smooth.

  4. Season to taste with fresh ground black pepper.

  5. Transfer mixture to serving bowl. Serve immediately or cover and refrigerate for later consumption.
