Basil Stuffed Chicken breasts in a rustic White Wine-Mustard sauce

Recipe Ingredients for Basil Stuffed Chicken in White Wine

7 oz chicken breast
1 1/2 tsp olive oil
1/2 cup white wine
1 tbsp mustard
1/4 cup fat free chicken broth
1 dash of salt and pepper
15 g fresh Basil

Recipe Directions for Basil Stuffed Chicken in White Wine

  1. slit chicken breasts halfway to create a pocket for the basil, taking care not to cut all the way through

  2. lay fresh basil inside, stems removed, slightly overlapping

  3. Optional: At this stage you can also stuff with goat's cheese and/or Prosciutto

  4. Season chicken breast with salt and pepper on outside

  5. Heat pan and add oil until hote, but not smoking

  6. Add breasts to pan and saute over moderate heat for several minutes until the chicken has cooked 2/3s way up but taking care not to burn the meat (adjust heat accordingly)

  7. Turn chicken and continue cooking until nearly done

  8. Remove chicken from heat and allow juices to heat up for no more than a minute

  9. Deglaze with whitewine and reduce

  10. Add chicken stock and mustard and then reduce

  11. Put chicken breasts on a plate and sauce
