Lower calorie pesto with most of the olive oil substituted with broth.

Recipe Ingredients for Basil Pesto

2 cups fresh basil leaves
2 tablespoons pine nuts
1/8 cup grated parmesan cheese
2 garlic cloves, peeled
1 tablespoon olive oil
1/2 cup reduced-sodium vegetable or chicken broth
1/4 teaspoon table salt

Recipe Directions for Basil Pesto

  1. Place pine nuts in 350 degree oven for around 15 minutes or until slightly brown. Let cool.

  2. Place all ingredients in a blender or food processor.

  3. Process until smooth.

  4. Can be frozen.
