Chicken and vegetables in a tasty basil pesto sauce. Quick, easy, and yummy all at the same time.

Recipe Ingredients for Basil Pesto Chicken and Vegetables

1 lb boneless skinless chicken
1 c sliced zucchini
1 c sliced squash
1/4 c basil pesto
1/4 c water
1/2 c shredded cheese

Recipe Directions for Basil Pesto Chicken and Vegetables

  1. Spray large pan with cooking spray.

  2. Add chicken and cover.

  3. Cook on medium high heat until lightly browned.

  4. Add vegetables, pesto sauce, and water. Bring to a boil.

  5. Reduce to medium heat and cook 6-8 minutes.

  6. Sprinkle with cheese and cover. Remove from heat and let stand for five minutes.
