Basil pesto, adapted from New Best Recipes.

Recipe Ingredients for Basil pesto (2tbsp serving)

4 oz fresh basil leaves
1/4 c olive oil
1/3 c pine nuts, raw
4 cloves garlic
1/3 c parmesan cheese, grated
1 salt to taste

Recipe Directions for Basil pesto (2tbsp serving)

  1. Put basil leaves in a plastic bag and bruise with meat tenderizer or rolling pin.

  2. Toast pine nuts in dry skillet over medium heat, stirring frequently until toasted.

  3. Toast garlic in dry skillet over medium heat, turning occasionally until fragrant and slightly browed (5-7 minutes).

  4. Chop garlic and put garlic, olive oil, pine nuts and basil in food processor or blender. Process until desired texture is reached.

  5. Blend in cheese and salt to taste.
