Herbed lentils with balsamic vinegar and cherry tomatoes

Recipe Ingredients for Basil Lentil salad

4 cups lentils (800g)
2 tbsp balsamic vinegar
1 small red onion
1 clove garlic
2 cups cherry tomatoes (1 punnet)
1 tsp thyme leaves
1/2 cup parsley
1/2 cup basil leaves
2 tbsp olive oil
1 tsp salt

Recipe Directions for Basil Lentil salad

  1. cook diced onion, tomatoes and garlic in balsamic vinegar. Drain/cook lentils and add to tomatoes with herbs and oil. Season to taste

  2. Serve with rice as main meal and other vegetables or salad
