Recipe Ingredients for Basil Feta Rice Salad

1 cup brown rice
5 garlic cloves
1 large red pepper
1/2 cup red onion
1/2 cup fresh basil
15 kalamata olives
1 cup broccoli
2 tablespoons pecans
1 cup feta cheese
1/4 cup olive oil
1 tsp salt
2 tsp dry basil
1 tsp lemon pepper
1/4 cup rice vinegar

Recipe Directions for Basil Feta Rice Salad

  1. # In cast iron skillet, on high heat, stir rice and peeled garlic cloves. Crack the husks in the hot dry skillet until the rice is browned and the rice has a toasted smell.

  2. # Add 2 cups of water to rice add buillion cubes and stir until dissolved.

  3. # Bake in 350 degree oven until rice is cooked, and all water is absorbed.

  4. # Cool rice.

  5. # Chop all vegetables, break the pecans into small pieces and toss in the feta cheese, then add the cool rice.

  6. # Add oil and vinegar, add dry basil. Add salt and lemon pepper a by halves until desire flavor is achieved. Chill, or serve immediately.
