Recipe Ingredients for Basil Chicken Chunks

16 oz diced chicken
1 yellow pepper
1/2 cup fresh basil
1/2 cup parsley
2 small tomatoes
2 tsp dijon mustard
1 tbs red wine vinegar
1 clove garlic
1 tbs lemon zest

Recipe Directions for Basil Chicken Chunks

  1. Mix together tomatoes, garlic, basil, parsley, lemon zest and pepper.

  2. Add in mustard and vinegar and set aside.

  3. Stir fry diced chicken until cooked through (about 5 minutes).

  4. Stir in the tomato/basil mixture and cook several minutes until chicken is coated.
