Basic Vegetable Stock Recipe

This is just a typical vegetable stock. Use it for cooking or as a soup base. I typically use whatever vegetables are left over in my fridge at the end of the week.

Recipe Ingredients for Basic vegetable stock

1 l water
4 cups celery
4 cups carrot
2 cups onion
1 green pepper
1 red pepper
4 leaves basil
1 tsp salt

Recipe Directions for Basic vegetable stock

  1. Add all ingredients to the water, no need to chop finely

  2. Bring to a boil

  3. Reduce heat to low and simmer covered for an hour

  4. Strain liquid stock into separate containers

  5. The stock can be frozen and used later
