Basic Tomato Sauce Recipe

I make this w/ the tomatoes I canned last summer- 64 oz = 2 quarts w/ juice. I add the cans of diced tomatoes and paste for additional flavor and textures. Use no salt tomatoes.

Recipe Ingredients for Basic Tomato Sauce

1 tbs olive oil
5 cloves garlic
1 large onion
1 tbs dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
2 cups sliced mushrooms
64 oz canned tomatoes
28 oz diced tomatoes
3 tbs tomato paste
1 teaspoon black pepper
1/2 teaspoon sea salt
1/4 teaspoon raw sugar

Recipe Directions for Basic Tomato Sauce

  1. - preheat olive oil in heavy bottom sauce pan

  2. - mince garlic and finely chop onion

  3. - add to pan and saute until soft

  4. - add mushrooms after several minutes (I often have these already sauted and frozen and just add to the pan)

  5. - stir in herbs when onions/garlic/mushrooms are to desired consistency- cook several min

  6. - add in tomatoes, juice, and paste and stir until mixed

  7. - add pepper, salt and sugar to taste

  8. - simmer over low heat for 1-2 hrs or until reduced to preferred thickness
