for pasta etc - 1 serving = approx 1/4 cup, use 2 servings for a full portion of pasta

Recipe Ingredients for Basic tomato sauce

300 g onion
1600 g tinned tomatoes
1/4 cup olive oil
1/2 t salt
1/4 t baking soda

Recipe Directions for Basic tomato sauce

  1. Heat the 1 tbsp of the olive oil in a heavy pan over a lowish heat. Add onion, finely diced and cook, stirring occasionally for 30+ minutes 'til very soft.

  2. Add tomatoes (chop first if whole), the bicarb and half the salt. Cook for 30 minutes over a low heat, then check for seasoning. Add the rest of the salt if necessary and a generous amount of pepper. Cook for another 10+ minutes, stir in the remaining olive oil and serve or cool to freeze or refrigerate.
