A simple sauce that makes a good base for other dishes

Recipe Ingredients for Basic Tomato Sauce GI Jane

400 g chopped tomatoes (canned)
1 tsp olive oil
1/2 onion, finely chopped
1 clove garlic, crushed
1 black pepper
1 pinch salt
1 pinch sugar
1/2 teaspoon oregano
1/2 teaspoon basil

Recipe Directions for Basic Tomato Sauce GI Jane

  1. Heat the olive oil in a non-stick saute pan and add the onion. Cook for a few minutes on a moderate heat before adding the crushed garlic and cooking for a few more minutes.

  2. Add the salt, sugar, oregano, basil & black pepper and stir to combine the flavours

  3. Add the tomatoes.... if using fresh tomatoes choose very red, ripe ones for flavour. Peel first by plunging them into boiling water for a minute or two and then slipping off the skins

  4. Stir to combine and cook on a low to moderate heat without a lid for about 15 minutes, stirring frequently. Let the sauce reduce down.

  5. Serve
