This is the basic soup for the soup diet from Good Housekeeping. With olive oil as I make it, it is 93 calories for a two-cup serving. Make it in a nonstick pan, and the calorie count drops to 84 calories a serving. Lots of good vitamins too. Mix it up: variations so you don't get sick of it. Don't forget to log the extra ingredients! 1) (Asian Chicken) To 2 - 3 cups basic soup, add 3 oz skinless chiken breast, chopped or shredded; 3 Tbls rice or barley, 1 tsp soy sauce, and 1/4 tsp thyme. Cook until rice or barley is done. 2) (Mediterranean) To 2 - 3 cups basic soup, add 1/2 cup drained canned garbanzos, 2 tsps lemon juice, 1/2 tsp oregano. Heat through. Top with 2 Tbls crumbled feta cheese. 3) (Curry) Mix 1/2 tsp curry powder and 1/2 tsp oil 9in saucepan. Cook over low heat 1 minute, stirring. Add 2-3 cups basic soup, 1/2 cup cooked or drained canned lentils, 1/2 cup canned or cooked sweet potatoes, chopped. 4) (Beef mustard) To 2 - 3 cups basic soup, add 3 oz lean deli roast beef, shredded, and 2 tsps Dijon mustard. Heat through. Top with 2-3 tsps lowfat sour cream. 5) (Mexican) To 2 - 3 cups basic soup, add 1/2 cup drained canned or cooked corn, 2 tsps lime juice, and 1/4 tsp ground cumin. Heat through. Add 1/4 cup shredded Monterey Jack or CoJack with jalapeņos. Top with 1 Tblsp minced cilantro. 6) (Sausage and Parmesan) To 2 - 3 cups basic soup, add 3 oz reduced fat turkey kielbasa or mild Italian sausage, cut up. Heat through. Top with 2 Tblsp Parmesan. 7) (Asian Shrimp) To 2 - 3 cups basic soup, add 4 oz peeled raw shrimp, 2 Tblsp dry couscous, 1 tsp soy sauce, and 1/4 tsp thyme. Heat to boiling, then simmer just until shrimp is done. 8) (Chicken Alphabet) To 2 - 3 cups basic soup, add 3 oz skinless cooked chicken breast, 2 Tbls alphabet macaroni (or orzo), 1 Tbls balsamic vinegar, and 1/4 cup water. Simmer until the pasta is done. 9) (Fish chowder) To 2 - 3 cups basic soup, add 4 oz cod fillet, chopped, 3 slices cooked turkey bacon OR 2 Tbls Hormel Real Bacon Bits, and 1/4 tsp thyme. 10) (Curry cream) Combine 1/2 tsp curry power, 1/2 tsp olive oil in saucepan. Cook over low heat 1 minute. Add 2- 3 cups basic soup and 1/2 cup cooked rice. Blend in blender on low. Return to saucepan; stir in 3/4 cup fat free milk. Heat through. 11) (Ham and cheese) To 2 - 3 cups basic soup, add 2 oz cooked ham, 1 tsp Dijon mustard. Top with 1/3 cup shredded Cheddar cheese and 1/4 cup croutons.

5 carrots
3 stalks celery
3 large onions
1 clove garlic, minced
1 tbls olive oil
56 oz tomatoes
1 1/2 lbs napa cabbage
2 cup+slices parsnips
10 oz baby spinach leaves
1/2 cup chopped parsley
3 chicken boullion cubes
1/2 tsp pepper
12 cups water

Recipe Directions for Basic Soup (for Soup Diet)

  1. Chop vegetables.

  2. Heat oil in large soup pot - at least 8 qt size. Add onion, garlic, celery, carrots and cook 5 minutes.

  3. Add tomatoes, chopped, with juice.

  4. Add parsnips, cabbage, spinach, parsley, bouillon cubes and pepper. Add 12 cups water. Heat to boiling. Lower heat and cook about 15 minutes.

  5. Keep 2 to 4 cups in refrigerator. Freeze remainder in 2-cup portions.
