A delicious and easy risotto dish

Recipe Ingredients for Basic Risotto

1 cup risotto rice
1 tblsp olive oil
1/4 cup onions, chopped
1/4 cup mushrooms, chopped
1/2 cup white wine
2 1/2 cups water

Recipe Directions for Basic Risotto

  1. Heat white wine and water in large container in the microwave until boiling. While heating liquid, toast risotto in a pan with a dash of olive oil. Add risotto to liquid, cover and return to microwave for 20 minutes. (if your microwave turns, don't disturb it; if not, stir after 10 minutes).

  2. While risotto is cooking add chopped veggies to pan, cooking until wilted, in remaining olive oil. When the risotto is done, stir in the veggies and serve. May sprinke a very small amount of parmesan cheese (it is LOADED with calories and sodium) for added flavor.
