Recipe Ingredients for Basic Red Lentil Soup

1 large onion, chopped
1 3/4 cup split red lentils
7 1/2 cups vegetable broth
1 tsp cumin
5 tbsp lemon juice (can use from anywhere between 3tbsp and 5 tbsps)

Recipe Directions for Basic Red Lentil Soup

  1. Combine the onion, broth, and lentils.

  2. Bring to a boil

  3. Let simmer for about half an hour until the red lentils are soft.

  4. Add in the cumin and lemon juice.

  5. Drizzle with extra virgin olive oil if desired.
