Add meat or fish to this basic ragu. Serve on french-cut green beans.

Recipe Ingredients for Basic Ragu

24 oz Caramelized Onion
1/2 cup pieces Mushrooms
224 grams Green Bell Pepper
1 cup, chopped Onions
436 grams Eggplant
237 grams Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Basic Ragu

  1. Chop eggplant into cubes.

  2. Chop onions and bell pepper into large dice.

  3. Slice zucchini and set aside.

  4. In a little olive oil, fry onions and eggplant until softened.

  5. Add tomato sauce and simmer for 30 minutes.

  6. Add zucchini slices and simmer 10 minutes more.

  7. Add mushrooms and take sauce off heat.

  8. Divide into 5 servings.
