Crustless Quiche, add any vegi or meat you want. Makes a nice meal with a salad.

Recipe Ingredients for Basic Quiche

4 eggs
2 c 1 % milk
1/2 c cheddar cheese
1/2 c Swiss cheese
1 salt and pepper to taste

Recipe Directions for Basic Quiche

  1. Options:

  2. cover the bottom 1/3 of the crust or pie plate with a combination of

  3. your choice, or just one of the following : spinach (fresh, frozen, thawed,

  4. very well drained - blot w/ paper towels) broccoli (frozen, thawed)green pepper,

  5. onions, tomato, mushrooms, diced potato, ham, crisp bacon (well drained),

  6. shrimp, crabmeat. IF YOU PREFER NO

  7. OPTIONS, ADD 2 MORE EGGS TO MIXTURE ABOVE.

  8. Heat oven to 425. Place optional ingredients then cheeses in the

  9. bottom of pie plate. Beat eggs slightly. Beat in milk, cream, salt and

  10. pepper. Pour over cheese and options. Bake 15 min. Reduce heat to 300.

  11. Bake until knife inserted in center comes out clean ( about 30 min).

  12. Let sand 10 min. before cutting.

  13. This recipe freezes very well and microwaves nicely (will get rubbery if done on high or for too long). Makes a nice meal with a salad.

  14. To lower fat content use low fat cheeses, and egg maker or egg whites.
