Basic pinto bean recipe. Makes creamy garlicky beans.

Recipe Ingredients for Basic Pinto Beans

2 lbs dried pinto beans
1 lb onions, coarsely chopped
6 c water
20 cloves garlic
1/4 c olive oil
1 T salt

Recipe Directions for Basic Pinto Beans

  1. Sort and clean the beans. Soak beans overnight and discard soaking water.

  2. Bring the beans and water to boil, reduce heat and simmer over low heat for 90 minutes.

  3. When beans are nearly ready, saute the onions over high heat until they begin to brown.

  4. Add the garlic and saute until some of the garlic begins to brown.

  5. Add the salt, onions, garlic, and 2 chipotle peppers and simmer for an additional 30 minutes.
