Basic Pesto Recipe

Makes 6 servings



Makes about 1/3 cup of pesto. Toss with hot noodles, use in stuffing, on salads, or thin with olive oil if desired. Toasting the pine nuts (or sub in almonds or walnuts, chopped), to add extra flavor. I add everything at once to the blender, giving time after for the "froth" of the oil to subside before use. Remains fresh in the refrigerator for up to 3 days, or 2 months in the freezer.

Recipe Ingredients for Basic Pesto

1 c fresh basil leaves, loosely packed
3 tbsp pine nuts
1 clove garlic, peeled
1/2 tsp salt
1 tbsp freshly grated Parmesan cheese
2 tbsp olive oil, extra-virgin

Recipe Directions for Basic Pesto

  1. Place all items except oil and cheese into food processor or blender and pulse until thick paste has formed.

  2. Stir in Cheese, then oil.
