High protein pick me up in the morning omelet

Recipe Ingredients for Basic Omelet

1/3 cup (Egg Beaters) Egg Substitute
3 cherry tomatoes, diced
6 spinach leaves
1 tbls grated Parmesan cheese
1 Pepper to taste
2 Basil Leaves (optional)

Recipe Directions for Basic Omelet

  1. Coat small saute pan with Pam cooking spray and heat to med low.

  2. Add egg substitute and heat until almost cooked through. Sprinkle with Mrs. Dash Italian Blend seasoning and pepper to taste. Flip the omelet onto the other side.

  3. Immediately layer the tomatoes, Parmesan cheese and spinach leaves on one half of the omelet. Fold the empty side over the mixture and press with spatula. Heat about 1-2 minutes on low or until the spinach JUST begins to wilt slightly.
