Recipe Ingredients for Basic Muffins

3 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
10 tbsp butter
1 cup sugar
2 large eggs
1 1/2 cups plain yogurt

Recipe Directions for Basic Muffins

  1. Preheat oven to 375. Coat a 12-cup muffin tin with cooking spray.

  2. Mix flour, baking powder, baking soda, and salt in medium bowl.

  3. Beat butter and sugar with mixer at medium-high until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in 1/3 of dry ingredients. Beat in 1/3 of yogurt. Repeat until fully incorporated.

  4. Use a large ice cream scoop to divide batter evenly among muffin cups. Bake until muffins are golden brown, 20 - 25 minutes.
